If a plate full of graham cracker crust, lemon, and meringue is that wrong way to celebrate Pi Day, we don’t want to be right. It doesn’t matter if we’re moving around our yards or chilling at the beach. Place the saucepan over medium heat and cook, whisking constantly, until the mixture starts to simmer and thicken. Put it on your menu now or pin it for later - it stores and saves perfectly in the freezer and you can essentially eat off of it for weeks! Combine large egg yolks, large eggs, sea salt, sugar, the zest of lemons, and 2/3 cup lemon juice (I used 3 whole lemons) in a medium saucepan, whisking well to combine. It’s so light and refreshing and is an awesome dessert to serve during the hottest summer months - so, you still have time 😉 It’s tart but sweet and is the best ending to barbecues, grilled dinners and summer suppers. It’s not an original recipe, but is one that we always enjoyed in the past and has been in my mom’s arsenal of easy go-tos for years. Are “they” watching or is everyone just really into icebox pies right now? My mom made this lemon icebox pie for dessert as the perfect complement to our fish fry dinner when Dave’s mom recently visited us and I knew I had to bring it to KN to share with you all.
